Over the holidays, my mother fed me well...too well, I'm afraid.  Even more so, I had a sack of leftovers to take with me once the holidays had ended.  If frozen or kept well in the refrigerator, they could still be good enough to consume.  One of the things my mom packed for me was some delicious meatloaf.  Out of the oven, it's fantastic.  But sitting cold in the refrigerator and then microwaving it seems to take away the homemade goodness that it once had.  I was experimenting in the kitchen one day and looked through my freezer.  I found some Texas Garlic Toast sitting in there and a light bulb flashed before my eyes...I knew I had one of those inexpensive sandwich makers (see picture below) which turns anything with two slices of bread into a delicious snack or meal.  So I plugged in the sandwich maker, took two slices of the Texas Garlic Toast and placed chunks of Mom's cold meatloaf in between the slices.  All I did was press down on the sandwich maker and within a few minutes, I had my own "Toasted Garlic Meat Loaf Sandwiches".  I'm no cook, but even I was impressed with the results...it tasted delicious!


And while you're trying to replicate that simple recipe, I want to mention that the green you see on this blog is in full support of the Philadelphia Eagles in their quest to become the National Football Conference champions as they face off against the Arizona Cardinals.  Do I sense a Super Bowl appearance by the Eagles?  I think so!
